Local Chefs Team Up With Lackawanna College
Earlier this fall, Lackawanna College, the City of Scranton and Scranton Tomorrow launched Rally for Restaurants to raise money for local eateries in the wake of the COVID-19 shutdown. Lackawanna College’s student-run restaurant, 409 on Adams, has invited local chefs to work side-by-side with culinary students to prepare an elegant, prix fixe dinner. All proceeds benefit the participating restaurants, while students get valuable, real-world training.
We visited on October 27, when AV Restaurant and Lounge was the featured restaurant. Chefs and students prepared a seasonal four-course meal. The evening started off with sweet potato and pork fritters for an appetizer and mushroom soup with thyme ricotta crostini. Next up was pumpkin gnocchi with brown butter sage cream sauce. Finally, for the main entrée, guests could choose between a pork tenderloin with carrot ginger puree or red wine-braised short ribs.
Guests dined under a heated outdoor tent in the college’s courtyard. Backyard Ale House provided bar service with some perfect drink pairings.
