Seasonal Dishes With a Fresh & Healthy Focus
While most restaurants were at a standstill during the COVID-19 shutdown, Shadowbrook Resort in Tunkhannock was hard at work revamping their restaurant. They took advantage of the time to transform the former Bogey’s Bar & Grill into Six West, a casual restaurant with a healthy flair.
Six West officially launched in June. The seasonal menu offers healthy choices like salads and grain bowls, as well as creative twists on burgers, sandwiches and wraps. They also serve shareable plates and dinner entrees that make the most of the latest harvest.
The menu changes every few months– in fact, a new one is coming out on November 3. But some of the most popular dishes are here to stay. We tried the signature Southwest Bowl, which is filled with hearty grains, roasted veggies and spicy, blackened chicken drizzled with buttermilk dressing. The Artisan Salad is another favorite, no matter what time of year. It’s a mix of fresh greens and shaved Brussels sprouts topped with roasted baby onion, creamy ricotta, white balsamic vinaigrette and spirals of sweet lemon-thyme tuile. And we couldn’t pass up the weekly dessert special: a decadent slice of Salted Caramel Cheesecake.
