The Settlers Inn at Bingham Park is a popular, historical inn and restaurant located in the quaint town of Hawley. From luxurious accommodations and a scenic setting to the comfy, country vibes in the restaurant, the Settlers Inn remains a favorite among locals and visitors to the Pocono Mountain’s famous lake region. We recently stopped by to give their farm-to-table breakfast menu a try.

The Vanilla Greek Yogurt Bowl seemed like the best place to start. This house made yogurt was super creamy, and the toppings took this simple dish to the next level. Toasted coconut flakes, fresh pineapple, sliced almonds, and cacao nibs made for the perfect light starter!

Next, we moved onto their Hearty Start section, what most consider to be the star of the menu. We were feeling something on the sweeter side, so we decided on the Strawberry and Cream Buttermilk Waffles. They showed up with that perfectly crispy golden exterior and a delicately light and fluffy center topped with warm maple syrup and fresh, plump strawberries.

Another popular choice on the breakfast menu is The Ratatouille and Ricotta Toast. Naturally, we had to give it a try. Fluffy Ricotta cheese, fresh sautéed veggies and egg whites are a triple, delicious threat piled high on top of warm, crunchy toast. It was easy to see why this one was a local favorite.

Finally, we opted to go all in with their classic, albeit enormous omelet. It arrived perfectly cooked and loaded with crispy bacon, roasted onions, basil and stringy, gooey cheddar cheese. And we can’t forget the little unsung heroes of every breakfast – the crispy, perfectly-seasoned home fries and a refreshing side of chilled fresh fruit.
