Healthy Eating: Franco’s

DiscoverNEPA has partnered with Diamond City Partnership, the Greater Wyoming Valley Area YMCA and the City of Wilkes-Barre Health Department to create a video series about healthy eating. Restaurants throughout downtown Wilkes-Barre will share fresh and wholesome recipes that you can make right in your own kitchen.

Today, Franco’s will show us how to make a refreshing Summer Citrus Salad with Grilled Shrimp.

This project was funded by the Pennsylvania Department of Health’s Preventive Health and Health Services Block Grant.

Summer Citrus Salad with Grilled Shrimp


2 oz. Arugula
6 Strawberries, sliced
1 Kiwi, sliced
6 Blackberries
1 Cara Mia Orange, peeled & sectioned
¼  cup Blueberries
1 Clementine, peeled & sectioned
6 Raspberries
½ oz. Goat cheese
1 oz. Candied Walnuts
5 Grilled Shrimp prepared with garlic, olive oil, parsley, salt, pepper, white wine & lemon
3 oz. Citrus dressing


Place arugula on a plate. Top with fruit, cheese and walnuts. Add grilled shrimp. Drizzle dressing on top. Enjoy!

Ensalada de frutos cítricos de verano con camarones a la parrilla


2 oz. de rúcula
6 Fresas, en rodajas
1 Kiwi, en rodajas
6 moras
1 naranja Cara Mia, pelada y seccionada
¼ de taza de arándanos
1 Clementina, pelada y seccionada
6 Frambuesas
½ onza de queso de cabra
1 oz. Nueces confitadas
5 Camarones a la parrilla preparados con ajo, aceite de oliva, perejil, sal, pimienta, vino blanco y limón
3 oz. Aderezo de cítricos


Coloque la rúcula en un plato. Cubra con la fruta, el queso y las nueces. Añada las gambas a la parrilla. Rocíe el aderezo por encima. ¡Disfrute!
