Healthy Eating: eden – a vegan café

DiscoverNEPA has partnered with Diamond City Partnership, the Greater Wyoming Valley Area YMCA and the City of Wilkes-Barre Health Department to create a video series about healthy eating. Restaurants throughout downtown Wilkes-Barre will share fresh and wholesome recipes that you can make right in your own kitchen.

Today, eden – a vegan café shows how to make the Amanda Wrap, which is filled with fresh veggies and smoked tofu.

This project was funded by the Pennsylvania Department of Health’s Preventive Health and Health Services Block Grant.


Amanda Wrap

Spinach tortilla wrap
2 oz. French dressing
6 oz. smoked tofu, baked and diced
Handful of chickpeas
2-4 mushrooms, raw and diced into bite-sized pieces
Half of an avocado, diced
Handful of spring mix
Handful of crunchy romaine lettuce

Drizzle the middle of the wrap with French dressing, from left to right.

Add all other ingredients in order listed above, distributing them evenly from left to right.

Fold in sides and roll wrap closed.

Place a frilly toothpick in the left and right side. Slice in half and enjoy!


Wrap Amanda

Wrap de tortilla de espinacas
2 oz de aderezo francés
6 oz de tofu ahumado, horneado y cortado en cubos
Un puñado de garbanzos
2-4 setas, crudas y cortadas en trozos del tamaño de un bocado
Medio aguacate, cortado en cubos
Un puñado de mezcla de primavera
Un puñado de lechuga romana crujiente

Rociar el centro del wrap con el aderezo francés, de izquierda a derecha.

Añadir todos los demás ingredientes en el orden indicado anteriormente, distribuyéndolos uniformemente de izquierda a derecha.

Doblar los lados y cerrar el wrap.

Colocar un palillo de dientes en el lado izquierdo y derecho. Córtelo por la mitad y disfrute.
